Medieval Cooking Basics - Spice Powders

Oftentimes when you are attempting to recreate a recipe you are met with ambiguous terms used for flavoring. When I originally published this at the Give it Forth Blogspot site, it was for just two of the commonly referenced powders - sweet powder and strong powder. As I have run across other receipts I have dumped them into this one single post. It is itself, a work in progress.

Powder Douce is a mixture of spices that can be found in medieval cookery. It is my belief that this mixture does not have a specific or exact "recipe" because it may have been largely dependent upon what was available at the time. What I do believe is that the largest proportion of spice in the mixture would have been sugar, followed by either cinnamon or ginger. This is a theory and in no way shape or form should it be quoted as fact!

My mixture relies on a 3:2:1:1/2 ratio of the spices based on my personal preference of being heavy on sugar, cinnamon, ginger, and then mace, nutmeg, cloves, and peppercorns. Sometimes I will grind up cubebs or grains of paradise with the back peppercorns which I use as the basis of another very basic spice blend "Powder Forte", or strong powder.

Powder Douce 1 tbsp. sugar (preferably organic, but refined white works in a pinch) 1 1/2 tsp. each ginger and cinnamon 1 tsp. each nutmeg and mace 1/2 tsp. each cloves and peppercorns Sometimes if I'm feeling especially cheeky, I will add coriander to the mix. Powder Forte differs from Powder Douce in that it is a pepper-based spice mix. The recipe I use has its basis in Robert May's "The accomplisht cook or, The art & mystery of cookery (1684) " Bolonia Sausages recipe. I used these sausages when I cooked the Coronation Feast of Cadogan and AnnMarie September 27, 2014". The recipe is very complete in regards to the ingredients to be used to flavor the sausages: ....then add to it three ounces of whole pepper, two ounces of pepper more grosly cracked or beaten, whole cloves an ounce, nutmegs an ounce finely beaten, salt, spanish, or peter-salt, an ounce of coriander-seed finely beaten, or carraway-seed, cinamon an ounce fine beaten... A dry ounce is approximately equivalent to 2 tbsp. This makes a LOT of powder forte, but I use it in almost daily. Powder Forte 1 tbsp. black peppercorns or, a mix of peppercorns, long pepper, cubebs, and grains of paradise 1 tsp. each clove, nutmeg, coriander, and cinnamon **Salt to taste** Both of these mixes are very versatile, are often called for in period cooking, and can be used in everyday cooking as well. I hope you enjoy it!

Fine Powder of Spices

A set of instructions found in Le Menagier de Paris (ab 1393) for fine spice powder:
FINE POWDER of spices. Take an ounce and a drachma of white ginger, a quarter-ounce of hand-picked cinnamon, half a quarter-ounce each of grains and cloves, and a quarter-ounce of rock sugar, and grind to powder.
To understand the instructions for fine powder it is first necessary to understand the system of weights and measures that are being used. In this period of history, the pound was based on the "Apothecary Weight" which is 12 ounces, and not the 16 ounces we think of today. This weight system was not standardized and weights varied from region to region. The Apothecary system was based on the concept of the weight of grain. The grain (weighting approximately 0.065 grams or 0.002 ounces) was the earliest and most uniform unit of measure. This measurement varied by region and culture-dependent upon if the weight was the measure of a single grain of barley or a single grain of wheat (1 barley grain weighed approximately 1 1/3 grains of wheat) taken from the middle of the stalk. With the understanding that the weight of a grain varied depending on which grain was being weighed, I offer my best interpretation of what the modern-day US measurement would be. The spice powder instructions that are found in Le Menagier de Paris refer to a drachma. The drachma is the measure of the weight of the Greek drachma which weighed approximately 52 grains or 2 drams. With this information in mind, the instructions for "Fine Powder" can be interpreted thus: Interpreted Recipe
Take an ounce and a drachma of white ginger = 10 drams of white ginger ~ approximately 7 1/2 tsp. or 2 1/2 tablespoons of white ginger a quarter-ounce of hand-picked cinnamon = ~ approximately 1 1/2 tsp. cinnamon half a quarter-ounce each of grains and cloves = ~ approximately 3/4 tsp. each grains of paradise and cloves and a quarter-ounce of rock sugar, and grind to powder - ~ approximately 1 1/2 tsp. sugar
Mix together and use as needed

Common Sauce Spices, Amended Rupert de Nola's Libre del Coch (ab 1529) gives instructions for Common Sauce Spices. Amended. Roughly translated from Spanish to English (thank you Google) this set of instructions can be translated to be:

Cinnamon three parts; cloves two parts; one piece ginger; pepper a part/ some dry coriander well ground/ a little saffron be all well ground and sifted.
Interpreted Recipe 1 tbsp. cinnamon 2 tsp. cloves 1 tsp. ginger 1 tsp. pepper 1/2 tsp. dry coriander (ground) Pinch of Saffron

Mix together the ingredients and use as needed. The Duke's Powder. Amended.
Another spice powder found in Libre del Coch De Nola. Roughly translated (again thank you Google) from Spanish to English this set of instructions can be interpreted to be:

Pólvora de duque. Enmendado, translated to English Cinnamon half an ounce, cloves half a quarter, and for the lords do not lie down but only cinnamon and sugar a pound if you want it sharp of flavor and for passions of the stomach throw you and little ginger
Interpreted Recipe Cinnamon half an ounce --1 tbsp. Cloves half a quarter (1/8th of an ounce) --3/4 tsp. Sugar a pound -- (based on the 12 ounce pound) 1 1/2 cups Ginger - a little --1 tbsp. M together and use as needed.
Note: A dry ounce is equal to two tablespoons, or 1/8th of a cup.

Blaunch Poudere My search for the elusive "blaunch poudere" ended when I located a set of instructions in The haven of health Chiefly gathered for the comfort of students, and consequently of all those that have a care of their health, amplified upon five words of Hippocrates, written Epid. 6. Labour, cibus, potio, somnus, Venus. Hereunto is added a preservation from the pestilence, with a short censure of the late sicknes at Oxford. By Thomas Coghan Master of Arts, and Batcheler of Physicke by Thomas Cogan. This book was published in 1636, which puts it into the grey area of period for the SCA. However, Thomas Cogan is documented as having died in 1607. Although I have been unable to locate it, the first edition of The Haven of Health was published either in 1584 or 1586.

CHAP: 126. Of Ginger. GInger is hot in the second degree, and dry in the first. It is the root of a certaine herbe, as Galen writeth. It heateth the stomacke, and helpeth dige∣stion, and is good for the sight. For this experience I have of Ginger, that a penny weight thereof toge∣ther with three penny weight of white sugar both made very small in powder and •earsed through lawne or a fine boulter cloth, and put into the eie, hath with∣in short time worne away a flegme growne over the eie: also with two ounces of sugar, a quarter of an ounce of ginger, & half a quarter of an ounce of Cina∣mon, al beaten smal into powder, you may make a ve∣ry good blanch powder, to strow upon rosted apples, Quinces, or Wardens, or to sauce a hen. But that gin∣ger which is called greene Ginger, or ginger Condite, is better for students: for being well made, if it be ta∣ken in the morning fasting, it comforteth much the stomacke and head, and quickneth remembrance, and is very good for a cough.
Interpreted Recipe 2 ounces of sugar = 4 tbsp. sugar 1/4 ounce of ginger = approximately 1 1/2 tsp. 1/8th ounce cinnamon = approximately 3/4 tsp. This powder creates a very light sandy-colored spice mix which is just a touch lighter than the pólvora de duque or Duke's Powder. I believe if I had used ground cassia cinnamon instead of the regular store-bought cinnamon this powder would have been even lighter. Because of Cogan's reference to this being "a very good blanch powder", I believe this is the "white" powder that is referenced in Harleian MS 279.

This is a recipe that is too good to pass up!  I learned quite a bit while working on this recipe and I am too excited to wait for the final product not to share. 

The author begins his book in a most humble fashion: 
Impartial Reader,

MAny reasons have at last induced me to present the world with this small Tract of my many years study and practice in the Art and Mysterie of Cookery.
....he goes on to explain his reasons and the one that has stuck with me throughout the years is this: 
Secondly, It hath been the practice of most of the ingenuous men of all Arts and Sciences, to hold forth to Posterity, what light or knowledge they understood to be obscure in their said Art: And the wisest of Philosphers, learned and pious men of old, have highly extolled these principles, who went not out like the snuff of a candle, but have left their Volumes to after-ages, to be their School-master in what they have a mind to practise, which calls back time, and gives life to the dead.
And another statement which struck me further into the letter of introduction: 
Yet there is an evil amongst most men, when they have learned themselves by other mens light, they would extinguish that light, that none might follow them; and so men monopolize all knowledge therein to themselves, and condemn all those that are a guide and light to the ignorant; there is none other but such will condemn me in what I have done.

I have a confession to make, when attempting to work out vague instructions in earlier books, I often find myself referring to books that are printed just out of period to try to develop an idea of what the flavorings may have been in our period. I have found that the instructions are a little bit more complete and this recipe for a pickled cucumber is no exception. The instructions on the preparation of your cucumbers, and the quantity of the seasonings is very complete.  What was surprising was the method used in creating your pickled cucumber.  The pickles are first brined and then some of the water is removed and replaced with white wine vinegar.  The result is a taste explosion in your mouth; floral from the cucumber, sharp from the vinegar and then the spices; first dill, pepper, and mace, and lastly bay and clove. It is delicious and a must try for anyone who enjoys pickles.  

You are first instructed to take your smallest cucumbers "after Bartholmew-tyde".  Bartholmew-tyde is August 24th and celebrates the festival of St Bartholomew - patron saint of tanners, plasterers, tailors, leatherworkers, bookbinders, farmers, housepainters, butchers, and glove makers. He is one of the 12 Apostles, and was either decapitated or skinned alive, the stories very.  The recipe gives us an idea of when to prepare the pickle.  Curious, I researched when cucumbers were in season, specifically in England.  I discovered that they are available March through October, but they are at their best in the months of April through September.  In preparing pickled cucumbers after the middle August, cucumbers were being pickled when they were at their best, and before the season ended. 

It is also interesting to note that the seasonings that are used in the preparation of this recipe; salt, bay leaves, dill leaves, pepper, mace, and cloves, are antibacterial. Cucumbers are layered in a pot or firkin with layers of Bay leaves and dill before a cooled solution of water infused with enough salt to bear an egg and dill as an option are poured over them.  

What this recipe seems to lack is an acid.  Further research pointed me to something I had discarded in my original attempt at this recipe because I did not understand the purpose of the instructions. Specifically, you are advised to "dip a cloth in beer, and rub them (cucumbers) clean from the dirt". Alcohol, in this case beer, acts as a preservative for the vegetables -- but only if -- the acidity of the alcohol is at least 5%.  At less than 5% acidity the opportunity for sugars in the alcohol and bacteria to interact is higher which could lead to illness.   

Pickling is a method of preserving fruits and vegetables by adding acid which transforms the flavor. There are two ways acid can be added to vegetables.  The first and the one most people would think of when you say pickle is the introduction of a vinegar based brine.  

The second, and the method, which is used here, is fermentation over a period of time in a water and salt solution during which time beneficial bacterial transforms natural sugars into lactic acid. It is commonly known as lacto-fermentation.  One of the more common misconceptions about lacto-fermentation is the idea that you need to introduce a dairy based whey (yogurt or whey from cheesemaking) to the vegetables to achieve the pickle.  The "lacto" in the term lacto-fermentation refers to lactobacillus, the bacteria which creates lactic acid as a byproduct. It lives everywhere and is commonly found on vegetables and fruit--no dairy needed.

How to pickle Cowcumbers

TAke your smallest Cowcumbers, or Gerkines, after Bartholmew-tyde, dip a cloth in beer, and rub them clean from the dirt, then put a laying of Bay and Dill leafes in the bottom of your Firkin or Pot, and a quantity of whole Pepper, two or three blades of Mace, and as many Cloves; then place a laying of Cowcumbers thereon; so continue with your said in gredients till your Pot or Firkin be full; then make a Liquor with fair water, and good store of Dill to make it strong, with so much salt as will bear an egg; you may infuse the Dill, or you may boyl it, but let it be cold, then put it into your Cowcumbers; let this pickle continue to them almost a fortnight, then pour part away, and fill it up with white wine Vinegar, so shall your Cowcumbers be green and crisp, and not too sour.

The whole body of cookery dissected, taught, and fully manifested, methodically, artificially, and according to the best tradition of the English, French, Italian, Dutch, &c., or, A sympathie of all varieties in naturall compounds in that mysterie wherein is contained certain bills of fare for the seasons of the year, for feasts and common diets : whereunto is annexed a second part of rare receipts of cookery, with certain useful traditions : with a book of preserving, conserving and candying, after the most exquisite and newest manner ...

Interpreted Recipe

1 pound small cucumbers
1/4 cup (or more) beer of choice (I suggest wheat beer, pale ale/IPA, stout or portar)
Handful of bay leaves (I bought the half ounce fresh herbs from the store)
Handful of fresh dill (see above)
1 1/2 tbsp. whole black pepper
1 1/2 tsp. ground mace
4-6 whole cloves
Heavily salted water (for each cup of water use 3 tbsp. of kosher salt-this will float an egg)

These directions are vague and for that I apologize.  I used a 32-ounce jar, the jar you use may be different in size, hence the "method" of the instructions instead of actual measures.  

Early in the day measure your water and add your salt.  If you wish to infuse the brine with dill, add the thickest parts of your dill stems, or dried dill. Bring the water to boil and allow to cool to room temperature. You may want to strain out the dill. I did not. 

While the brine is cooling prepare your jar and your cucumbers.  The jar needs to be super sterile, I washed my jar on the sterilize cycle in the dishwasher.  The cucumbers need to be cleaned off with your beer. Cut off the stem end of the cucumber and wipe the cucumber off with a towel dampened with beer.

Cover the bottom of the jar with bay leaves and fresh dill and then add your cucumbers. Continue to layer until your jar is full.  Add in the remaining spices and cover with the brine.  I used a coffee filter tied to the jar with some string instead of the lid.  Allow the jar to sit in a warm place for 12 to 14 days.  Pour off a measure of your water (I removed half the water and added the vinegar and found it too sharp the first time.  The second time, I removed a cup of water and added a cup of vinegar and I preferred that) and add your white vinegar.  Pickles will store beautifully in the refrigerator for approximately two months.  The longer they are stored, the better they will taste. 

Note: If the pickles feel bad (slimy or feel rotten), smell bad (rancid), become odd colored (grey, brown or black), develop a funky colored mold (anything other then white), tastes bad (if you are brave enough to taste something that smells foul and feels slimy), or makes your stomach upset after a taste test-- toss it and start over.  Do not take chances.  

White yeast known as Kahm yeast may develop on top of your pickle. It is fuzzy in appearance and may have an odor, but not a rancid one. It is harmless and will not affect taste, smell, or feel of your pickle, remove it and the item it may have attached to. If your pickle is complete, place it in the fridge, otherwise you may notice a return of the Kahm in a few days.

I must smile whenever I reference "bread", because there is a great debate about what differentiates bread from pastry especially in period. I am also reminded of a rather tart blog post that referenced my interpretation of "rastons" calling me out publicly on the fact that I had "incorrectly" referred to rastons as a kind of bread.  Here we have the root of what I like to call “The Great Debate" which at its epicenter is this: all pastries are bread, but not all breads are pastries. The difference between a pastry and a bread (aside from purpose) is fat content. 

At a minimum pastry’s are made of flour, water, salt and fat in different proportions. The leavening agents for most pastries are steam and air except for brioche, danish and croissants which use yeast. The minimal ingredients for bread any bread are flour and liquid. The leavening agent being mostly yeast. 

Bread is defined as a food made from flour and water (also known as a paste). And there you have it, the answer to "The Great Debate".  All pastries are a kind of bread, but not all breads are pastry.  

To make French Bread the best way.

Take a gallon of fine flour, and a pint of good new ale barm or yeast, and put it to the flour, with the whites of six new laid eggs well beaten in a dish, and mixt with the barm in the middle of the flour, also three spoonfuls of fine salt; then warm some milk and fair water, and put to it, and make it up pretty stiff, being well wrought and worked up, cover it in a boul or tray with a warm cloth till your oven be hot; then make it up either in rouls, or fashion it in little wooden dishes and bake it, being baked in a quick oven, chip it hot.
 

Interpreted Recipe 

1 cup lukewarm water

2 tbsp. dry yeast (or 2 cakes fresh)

1 cup lukewarm milk

1 tbsp. salt

1 egg

6 cups sifted unbleached flour

 Pour water and milk into a mixing bowl mix in the egg, 1 cup flour and then add the yeast.  Allow to sit until a sponge has formed.  Once the sponge has formed sprinkle in the remaining flour until it has all absorbed.  Turn the dough out onto a flat surface and knead it for approximately five minutes.  Put into a cleaned warmed bowl and allow to rise until doubled in size. 

When the dough has doubled in size, turn it onto a floured work surface and knead into a ball. Divide the ball into 2, 4, 8 or more equal parts. Knead each into a small ball, and with the palm of your hand flatten the ball.  Cut around the circumference of the ball halfway between the top and bottom.  Place each roll approximately two inches apart on a floured cookie sheet and allow to rise until doubled in size.  Bake at 400 degrees for approximately 20 minutes.  

I take a couple of shortcuts when I make this bread and a few liberties.  I add an equal amount of honey or sugar (1 tbsp) to the original sponge and then add the salt in when I add the additional flour.  I find that the addition of the honey makes the bread sweet and a little more interesting in flavor.  You may notice that the bread is also darker than expected.  The honey was very dark, and 1/3 of my flour was whole wheat for this loaf.

Have good seed, pick it, and wash it in cold water, drain it, and rub it dry in a cloth very clean; then beat it in a mortar with strong wine-vinegar; and being fine beaten, strain it and keep it close covered. Or grind it in a mustard quern, or a bowl with a cannon bullet.

Otherways.

Make it with grape-verjuyce, common-verjuyce, stale beer, ale, butter, milk, white-wine, claret, or juyce of cherries.

The seed being cleansed, stamp it in a mortar, with vinegar and honey, then take eight ounces of seed, two ounces of cinamon, two of honey, and vinegar as much as will serve, good mustard not too thick, and keep it close covered in little oyster-barrels.

To make dry Mustard very pleasant in little Loaves or Cakes to carry in ones Pocket, or to keep dry for use at any time.

Take two ounces of seamy, half an ounce of cinamon, and beat them in a mortar very fine with a little vinegar, and honey, make a perfect paste of it, and make it into little cakes or loaves, dry them in the sun or in an oven, and when you would use them, dissolve half a loaf or cake with some vinegar, wine, or verjuyce.

Interpreted Recipe

Mustard of Dijon, or French Mustard
Makes approximately 3 cups

1 Cup Mustard Seeds
1 ½ Cups Mustard Powder
¼ cup cinnamon
¼ cup honey
½ cup vinegar
1 ½ cups water



Grind the whole mustard seeds for a few seconds in a spice or coffee grinder, or by hand with a mortar and pestle just enough to crack. Pour the seeds, mustard powder, honey and cinnamon into a bowl and then add COLD vinegar and water. Wait at least 12 hours before using. Seeds can be a mix of brown, black or white. Black offers the most “heat”.

Note: I purchased prepared whole grain mustard and stone ground mustard mix in lieu of making the mustard. To these I added the cinnamon and honey. This dish was prepared almost a month in advance of the feast.

Homemade Vegetable stock, Vegetable Stock Powder & Homemade Bouillon Cubes



I am not sure about you, but for myself, I worry about my budget when I am cooking and -any- place I can cut corners I do.  I am constantly looking for what I like to call 'found foods'.  Items that make something from what would otherwise be nothing.  Stocks are one of those items.  They add flavor to your dishes and can be quite costly, or salty or may contain items that were not found in period if you choose to purchase them.  In order to shave the cost off my budget, and to ensure that I know what I am serving, I make a lot of my own stocks, powders and bouillon cubes which make use of items I have already purchased, but would otherwise throw away--it's a win-win. 

Outlined below will be the instructions for homemade vegetable stock powder which can travel with you and can be used to add additional flavor to any dish.  It does not require refridgeration so it is a perfect "camp food". You will also find instructions for making vegetable stock, meat stock and homemade bouillon.  Bouillon requires refridgeration but it is a flavor BOMB and is another item I consider a necessary food to take on camping trips.


Vegetable Stock Powder

1 unpeeled carrot
2 celery stalks
1 onion
1 leek
2-3 cloves of garlic
a handful of parsley
2-3 sprigs of thyme
1 -2 sprigs of rosemary
Salt

Opt: Other vegetables or herbs as desired

Wash your vegetables and herbs and then run through the food processor--you want them to be very finely chopped if you do not have a food processor.  Before cooking them you will want to weigh them.  Your salt content should be approximately 20% of the total weight of your vegetables.  If you have 16 ounces of vegetables, pre-cooked weight you will want to add about 3 ounces of salt. I prefer sea salt.

Mix thoroughly and place your vegetables into a pot over low heat. Cook about two hours.  Stir occasionally. You will notice at first the mix can get quite soupy as the vegetables release their water. Don't worry, the vegetables will reabsorb the water. When the water has been completely reabsorbed you can move onto the next step. 

 Spread the vegetables onto a parchment lined baking tray.  Bake at the lowest setting in your oven (mine is 170), until the vegetables have dried out and become crispy.  You will want to stir them every so often while they dry in the oven.  Allow them to cool and then process in your food processor until the vegetables become a powder.  You can store the powder for about three months in an airtight jar. 

To use: add 1 tsp of powder to 1 cup of water, or to taste.

Vegetable Stock 

Have tired vegetables in your drawers? Vegetable peels? Don't throw them out.  Save them in the freezer and when you have some time, use them to make vegetable stock. This is an easy and cost effective way to use up vegetables and vegetable parts (carrot peels, onion tops, celery leaves and the white woody ends, etc.) you would otherwise throw away. Your feast budget will thank you. If you are making a vegetable stock be sure to include mushrooms, tomatoes (if not cooking period) or nori--do not skip this. These vegetables create "umami", a savory or meaty flavor to your stock which is very much needed in vegetable stock.

For the most basic of stocks you will need carrots, celery and onions (leave the skins on; it turns the broth brown), but don't stop there, you can add flavor with tomato or mushrooms, leeks, beets (it creates a lovely red broth), asparagus, squash, fennel, eggplant etc. There are a few vegetables that you may not want to use, or use sparingly, cabbage being one.  The others include turnips, rutabega, artichoke, cauliflower and broccoli.  I personally enjoy the "bitter" notes that the cabbage and turnips add to a long-cooked broth, but I caution you to use your best judgement. Also--it should go without saying, if the vegetables go beyond tired to spoiled, rotten or moldy--don't use them.

The process is simple, and requires just a little bit of elbow grease and time.  

To begin, saute your sturdier vegetables in the barest bit of oil until tender.  Cover with water, add any seasoning you wish (salt, pepper, garlic, rosemary, thyme, savory, etc.), bring to a boil, cover with a lid and lower to simmer--walk away and forget it for at least an hour.  An hour is absolute minimum to make any stock--the longer the simmer, the more flavor you get.  Near the end of the cooking process you are going to want to taste for salt and flavor.  If it's lacking, you can add tomato paste (if  you are not cooking a period dish) or nutritional yeast (for a cheesy, umami flavor).  Turn off, let cool, strain, and store.  Vegetable stock will keep approximately five days in a fridge, or nearly forever frozen. 

Homemade Bouillon

Bouillon is a fancy name for broth. There was a time that I would reach for the cubes in order to flavor stocks, broths, gravies and other dishes.  Unfortunately, they are full of salt, MSG and other things, such as hydrogenated oils, that I just don't want to share with those I love when an alternative is available.

The first thing you should notice is that this is more of a method, than it is a recipe and it should start with -any- homemade stock; beef, chicken, pork, mixed or vegetable.  It takes the process of making stock one step further to create a flavor bomb. Follow the instructions below to get you started on this adventure.

To Make Stock

Making your own stocks are very cost effective for feasts, so save your bones and your scraps of veggies! Just toss them in a ziplock bag in the freezer until you have enough to make a good stock. Make your stock and can or freeze until needed.

There are two separate ways to make stock. The first is on the stove top/slow cooker and the second is in your oven. For any stock you will need bones (preferably some with meat), vegetables, aromatics, water and time--lots and lots of time.

I prefer to roast my bones before making any meat stock which adds an additional flavor component.  Simply place your bones in a baking dish and roast  in a 400 degree oven for approximately 45 minutes.  If the bones were frozen,  you will want to thaw them before you roast.  Marrow bones really benefit from this step, developing a deep, rich flavor while they roast. DO NOT skip this step. 

A good stock will -always- start with cold water. During the initial boiling of the stock--skim, skim, skim. You want to remove any and all impurities that come to the surface. After the initial boiling, lower your temperature to a simmer, cover with a lid slightly askew and  forget it.  I know you will be tempted (I know I am) but *never, ever!* stir the stock once you set it to simmering. This will make it cloudy and a sign of a good stock is that it should be clear and richly colored at the end of the process. 

A really good meat stock will convert to a gelatin when cold. This happens because the collagen in the bones dissolves which can only happen during a very long simmering process.  A good stock has a deep, well-developed flavor that is imparted through the aromatics and vegetables. The longer your stock cooks the better it is. 

My basic veggie blend for any stock includes a couple of carrots, celery and onions. For seasoning, I  also use parsley, rosemary, thyme, bay, garlic and black pepper. Wash your vegetables, roughly chop and make a bed of them for your roasted bones. There is no need to peel, unless the skin has been damaged in some way. 

Stovetop Method

A good rule of thumb to remember is that for every pound of bones you will need approximately 2 quarts of water. When making stock, be sure that the bones are covered by at least an inch. Add your aromatics, bring to a boil, skim off the scum and then lower the heat and simmer. Simmer times vary but I prefer about five hours for most stocks. Use your best judgment.

Oven Method

Stock will cook overnight in a 275 degree oven.  This is a great method to use and I use it quite often. I just tuck the bones, vegetables and water into a roasting pan (usually the one I roast the bones in so I can get all the great flavor from the bottom of the pan) and go to bed. In the morning I have a lovely stock.  

Once you have finished cooking your stock, strain it at least once to make sure that you are removing all the bits. I do this by lining a wire strainer with a piece of muslin and pouring the stock through it. Allow your stock to cool overnight. Once the stock has cooled remove the fat, reheat and strain it once again just to make sure that it is very clear.

To Make Bouillon

Once your stock has been made, skimmed and strained, you can begin the method of reducing the stock to its own concentrated bouillon.  This is especially useful if space is an issue.  One gallon of stock will reduce to about 1 cup (yes, 1 cup!) of liquid bouillon. 

Return your stock to a pot and bring to a fast boil, then lower to simmer and cook till the stock has reduced by half. This will prevent the stock from over-reducing and burning. You will know that your stock has reduced enough when it has thickened to a sauce that will coat the back of a spoon, has the consistency of a syrup, is lush, glossy and rich! It should be a bit runny with some weight to it.  

To set your bouillon, line an 8x8 or 8x13 pan, or an ice cube tray (depending on the amount of stock you have) with plastic wrap and pour the cooled sauce into it and refridgerate overnight.  To store, cut your bouillon into squares and place in small jars or Ziplock bags.  They will store two months in the fridge or up to a year in the freezer.

To use, approximate measure is 1 tsp per cup of water.

Siliqua is Latin for the seed of the Carob Tree (also referred to as St. John's bread or Locust Tree).

According to the Ryōri Monogatari,“Suimono” refers to a clear (or relatively clear) broth. The bowls should obtain few ingredients and should not feel crowded. In keeping with the tradition of one soup, and "X" number of sides, the soup that was provided in the second round was a suimono that would normally contain oysters, but, clams were substituted via cook's prerogative because the cook (me) does not care for the taste of oysters. Perhaps it has something to do with being land locked? Oysters come canned or frozen, but not exactly fresh?

Kaki かき (Oysters) - Put in salt, leave a good amount, and put in the oysters. When it steams, season to taste. If there is too little broth, then water or dashi can be put in. It can also be done without putting in the salt. Adding sakeshio is good.

Note: Clams substituted for Oysters

Interpreted recipe:

1 lb.clams (live, in shell, about 12 to 16)
5 cups water
Salt to taste
To garnish: lemon peel /or  mitsuba  (wild Japanese parsley)

Soak clams in salted water overnight, or at least for several hours. Heat basic clear soup to boil, drop in clams. After shells open up, place in a small soup bowl. Strain soup stock. Bring stock to a boil, and garnish with strips of mitsuba.

Note: The Japanese store where I purchased most of my items had frozen clams in the shell in 2 pound packages.  I used these for the feast. 

DASHI だし (BASIC STOCK) Chip katsuo into good size pieces, and when you have 1 shō worth, add 1 shō 5 gō of water and simmer. Sip to test and should remove the katsuo when it matches your taste. Too sweet is no good. The dashi may be boiled a second time and used.

Note: In Japanese cooking there are five different types of dashi:

Kombu Dashi - made from dried kelp (kombu)
Katsuo Dashi - made with katsuobushi (dried bonito flakes)
Iriko Dashi - made from iriko (dried anchovies), or niboshi (dried sardines)
Shiitake Dashi - made from shiitake mushrooms that have been dried
Awase Dashi - made from a combination of any of the above.

Many of the dishes I prepared used Awase Dashi as the stock, either a mixture of kimbu and katsuo or kombu and shiitake. The instructions for the dashi used for this dish can be found here.

Eric Rath advises that a "typical formula for describing the organization of trays and dishes at honzen banquets was “seven, five, three”. This indicated three trays each with a soup, and seven, five, and three side dishes on them respectively. This was the format of the banquet for Iemitsu in 1630, and one that was typical service for the shogun in the Edo period." It is believed that the discovery of "yuzuke" was an accident, attributed to the third Muromachi shogun, Ashikaga Yoshimitsu (1358–1408)  when he became drunk at a party, poured hot water on his rice, and ate it.

He further explains:
"Three trays was a typical formulation for shoguns, but the number of trays and the number of dishes on them varied for guests of other rank. Large banquets in the Muromachi period might have up to thirty-two side dishes, although some of these dishes, like a few described below, were decorative and not meant to be consumed.In the Edo period, most samurai including daimyo were, like commoners, limited by sumptuary legislation to just two trays of food at banquets, albeit daimyo that held their own provinces (kunimochi) were allowed seven side dishes, but commoners and hatamoto could only have five side dishes."

One of the more historically interesting dishes that was served at the feast was Yuzuke. Introduced in the Heian era, "yuzuke",  is a bowl of rice and hot water poured on top. It became f a formal banquet dish during the Muromachi era.  It is speculated that it may be a precursor to ochazuke. The "Ryori Monogatari (Story of the meals)" a recipe similar to ochazuke which combies rice, chestnuts, or sweet potato with tea. I include the information from the Ryori Mongatari for interest, but it was NOT served at feast.

NARA CHA 奈良茶 (NARA TEA) - First, roast the tea, put it in a bag, and boil just the tea and azuki. Next, put in beans and rice, and roast half of them. Make sure to cut the beans open and discard the shell. Alternatively, add such things as sasage, kuwai, or roasted chestnuts. Season with sanshō powder and salt. Whatever you season with is very important.

The Yuzuke that was served at feast consisted of rice with hot water poured over it and was garnished with umeboshi and furikake. It was visually stunning and so simple to put together.
